F1 2018 how to change ai difficulty in career mode?

you can change everything if you press the options button while loading between race weekends. So when you press "next weekend" and the loading starts you have to press options button. For me its button 8 on thrustmaster t300

Oh just like 2017 version! Can we change the interview timer as well which is by default on Full Speed?

I was able to change the interview speed in between race weekends (on PC). Never thought they'd even consider adding the option to turn it off, such a relief to be able to take my time now.

Is there new information when this bug is fixed? I do not want to start a career until this is resolved. It would be nice to drive at the extreme limits all the time and not to wonder the real level of difficulty for each race.

Patch 1.06 just came out on PC and it's been fixed. You can even change the difficulty during the loading screen when going back into the Data Centre from an on-track session (in F1 2017 you had to exit to the main menu then reload your career to do this). Personally, I'm very pleased. ::smile:

Can you change it simply by pressing  pause while on workstation between sessions?

Yes. When you press "advance" after any session, there is a small window where press start/options appears during the load screen for practice and qualifying. It's very easy to miss as it's there for maybe a sec when loading from SSD. When advancing to the next race from workstation it appears as well.
