I personally also set it to Lean Fuel Mix to prevent as much wheelspin as possible, but this video was also informative.

I finally figured this out myself.  Trying watching the AI on replay a few times, watch what they do to start the race.  To pull it off really well, you need great timing, and decent throttle control.  Basically, put the car in 1st gear, rev until you're at the 12 o'clock position on the rev counter.  When the red lights drop, punch the throttle down quickly (this is where the great timing part comes in) and then back off the throttle for a second, and let the revs drop well down, then slowly build them back up with controlled throttle.  Try this, practice it, and you can launch just as well as the AI does, without traction control.  I didn't find it as hard to do as it sounds, and I get good to great starts every time now.  The quick stab at the throttle at the beginning gets the tires spinning and launches the car (not to mention heats up the rear tires nicely), just like the AI do.  The AI spin their tires ever so briefly to get the car rolling.
